Making Cabbage rolls

You can see here that I have pulled several leaves off the cabbage and taken the main vein off with a sharp knife. The one I'm rolling here is just about perfect. When you start into a cabbage, the first few leaves are not so good for rolling; neither are the last ones, which tend to be thick and inflexible.
