Oh, Moroccan pancakes with apricot liqueur sounds soooo good - yum! Speaking of missionaries on toast, we had a native African missionary bring us some morsels once when I worked for the missions agency. The German missionaries would bring us German chocolates at Christmas. The Mexican folks would make the most wonderful food.
I collect cookbooks - wish I had more time to cook - but once in a while! I have a Filipino friend who makes us ethnic food, and at work there is a Micronesian girl that I can't wait to get recipes from and would also like to paint her exotic self!

African food is wonderful. It is hard to lump it all together - it is so diverse.
Groundnut stew from West Africa with plantains or manioc fufu is one of my favorites. Ethiopian Doro Wat is also exquisite.
