In Search of Giant Squid
Here is my "made it up as I went along" recipe for squid and mango salad.
I started with some grocery store squid, previously frozen, cleaned, nothing spectacular.
Meanwhile, I made matchsticks out of a nice ripe mango, picked an assortment of lettuce from our little garden out back, and started some charcoal on the bbq (I contend that this recipe just isn't quite as good with a gas bbq). Grill the squid on a really hot fire until they are well cooked and the tenticles get crispy. Let cool.
Chop up the squid....I cut them into rings, then cut the rings in half. Toss it together with the mango and lettuce. If it makes you happy, slice up a sweet onion or a red onion and toss that in too. I considered mushrooms too, but decided it would be over-kill. Maybe next time.
Make a dressing like this: squeeze a lime, add an equal amount of obsenely good extra virgin olive oil (we use nectar of the gods known as Salah's Gold).....add about a teaspoon of honey mustard....in a pinch, use ballpark mustard, but don't you be using any dijon or chardonnay mustards or anything like that. Add some kosher salt and a modest amount of fresh ground pepper.
Stir up the dressing and toss it in with the salad.
Put some really good music on the stereo. Pour yourself a beverage, whatever you like, and enjoy.

never thought of grilling calamari before....gotta try it. Recipe sounds great!
